50 ml Amarula Cream liqueur (substitute with full cream milk for a non-alcoholic version)
200 g dark chocolate
20 g butter
80 ml condensed milk
A handful of shortbread biscuits, roughly chopped
150 mini pink and white marshmallows
A big handful of your favourite sweets like Speckled Eggs, Jelly Tots, Smarties etc
200 g white chocolate, roughly chopped
Directions
- Line an 8 cm x 20 cm pan with non-stick baking paper.
- Place the liqueur (or milk), chocolate butter and condensed milk in a pot and heat over very low heat until melted (you can also do this in the microwave or over a double-boiler). Stir until smooth.
- Remove from the heat and stir in the other ingredients (but only half of the white chocolate). Spoon into the prepared pan and refrigerate until set (about four hours).
- Melt the rest of the white chocolate and drizzle it in a creative way over the rocky road. Allow to set, cut into squares and serve. Store in an airtight container in the fridge for up to one week (but will it last that long?)
