250 g butter, at room temperature
200 g light brown sugar
100 g white sugar
2 eggs
5 ml vanilla essence
350 g cake flour
5 ml baking soda
2 ml salt
1 slab (80 g) each white chocolate, milk chocolate and dark chocolate (choose the best quality chocolate you can get)
Directions
- Preheat the oven to 180°C and line a baking tray with baking paper.
- Beat the butter and sugars together until light and fluffy. Add the eggs one by one and beat well after each addition.
- Add the vanilla essence and mix through. Sift over the flour, salt and baking soda and mix well.
- Chop each chocolate slab into bite-sized chunks and stir into the cookie dough.
- Spoon big spoonfuls of the dough onto the prepared tray (you can make the cookies big or small, whatever you prefer). Place the cookies at least 5 cm apart.
- Place the tray in the oven and bake about 10-15 minutes (depending on the size of your cookies), until golden brown and crisp. Allow to cool for a few minutes on the tray, and transfer to a wire cooling rack to cool completely. These cookies will stay fresh for up to a week in an airtight container (but what’s the chance of them surviving that long!?)
